Ingredients

  • 1 large sweet potato, sliced lengthwise into 1/4-inch rounds
  • 1 tbsp olive oil
  • 2 tbsp almond butter
  • 1/2 banana, sliced
  • pinch of cinnamon

Method

    Preheat oven to 400°F. Brush sweet potato rounds with olive oil and arrange on a baking sheet.

    Roast 20-25 minutes, flipping halfway, until fork-tender and lightly browned at the edges.

    Toast the roasted rounds again in a toaster or under the broiler for 2-3 minutes — this second toasting firms up the surface so it holds toppings like real toast, instead of staying soft and floppy.

    Top each round with almond butter, banana slices, and a pinch of cinnamon.
