Ingredients

  • 1 medium sweet potato, diced small
  • 2 cups fresh spinach
  • 1/2 small onion, diced
  • 1 tbsp olive oil
  • salt and pepper to taste

    Preheat oven to 375°F. Heat olive oil in an oven-safe skillet over medium heat.

    Sauté onion and sweet potato 8-10 minutes until softened.

    Add spinach and cook until wilted, about 2 minutes.

    Whisk eggs with salt and pepper, pour over the vegetables, and stir gently to distribute.
