Ingredients

  • 4 large eggs
  • 1 tbsp coconut oil
  • 1 tbsp chopped fresh chives
  • 1 tbsp chopped fresh parsley
  • salt and pepper to taste

Method

    Whisk eggs with salt and pepper until well combined.

    Melt coconut oil in a non-stick skillet over medium-low heat.

    Pour in eggs and cook slowly, stirring gently, until soft curds form, about 4-5 minutes.
