Ingredients

  • 8 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 cups steamed broccoli florets, chopped
  • 1 cup shredded dairy-free cheddar-style cheese (a melting variety)
  • 1/4 onion, diced
  • salt and pepper to taste

Method

    Preheat oven to 375°F and grease a 9x9-inch baking dish.

    Whisk eggs with almond milk, salt, and pepper.

    Stir in the chopped broccoli, diced onion, and half of the dairy-free cheddar.

    Pour into the prepared dish and scatter the remaining cheese on top.
