Ingredients

  • 2 large eggs
  • 1/4 tsp salt
  • 1 tsp olive oil
  • 2 oz smoked salmon
  • 1/4 avocado, sliced
  • 1 tbsp fresh dill
  • handful of arugula

Method

    Whisk the eggs with salt until fully combined and no streaks of white remain.

    Heat olive oil in a small non-stick skillet over medium-low heat and swirl to coat the pan.

    Pour in the eggs, tilting the pan to spread them into a thin, even layer like a crepe. Cook 2-3 minutes until just set, without flipping.

    Slide the egg onto a plate, layer with smoked salmon, avocado, dill, and arugula, then roll it up like a wrap.
