Ingredients

  • 1 tsp culinary-grade matcha powder, sifted
  • 2 tbsp hot water (not boiling — around 175°F/80°C)
  • 3/4 cup full-fat coconut milk
  • 1 tsp maple syrup or monk fruit sweetener

Method

    Sift the matcha into a bowl or mug to break up any clumps — matcha clumps easily and won't dissolve smoothly otherwise.

    Add the hot water — water above 175°F/80°C will scorch the matcha and make it taste bitter and grassy.

    Whisk briskly in a zigzag 'W' motion until frothy and no dry powder remains.

  4. 4

    Warm the coconut milk separately until steaming, then pour it over the whisked matcha and stir in your sweetener.
