Overnight Oats & Pudding

Tropical Chia Pudding with Pineapple

Whisking the chia mixture again after 10 minutes — not just once at the start — is what prevents it from clumping into a solid ball at the bottom.

Ingredients

  • 1/3 cup chia seeds
  • 1 1/4 cups full-fat coconut milk
  • 1/2 tsp vanilla extract
  • 1/2 cup diced fresh pineapple
  • 2 tbsp unsweetened shredded coconut

Method

  1. 1

Whisk chia seeds, coconut milk, and vanilla together in a jar or bowl.

  2. 2

Let sit for 10 minutes, then whisk again thoroughly — chia seeds sink and clump if left undisturbed too long, and this second whisk is what keeps the pudding evenly gelled instead of lumpy.

  3. 3

Cover and refrigerate at least 4 hours or overnight until fully thickened.

  4. 4

Top with diced pineapple and shredded coconut before serving.
