Ingredients

  • 1/2 cup certified gluten-free rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/4 cup unsweetened coconut yogurt
  • 1 tsp vanilla extract
  • 1 tsp maple syrup or allulose
  • 2 tbsp sliced almonds

    Combine oats, almond milk, coconut yogurt, vanilla, and sweetener in a jar, stirring well.

    Cover and refrigerate at least 4 hours or overnight.

    Just before serving, toast the sliced almonds in a dry skillet for 1-2 minutes until golden — toasting them right before serving, rather than the night before, is what keeps them crunchy instead of turning soft from the moisture in the fridge.
