Ingredients

  • 1/3 cup chia seeds
  • 1 1/4 cups full-fat coconut milk
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp allulose or maple syrup
  • 1/2 tsp vanilla extract

Method

    Whisk the coconut milk and cocoa powder together first until completely smooth — doing this before adding the chia seeds prevents the cocoa from clumping into dry pockets once the mixture starts to gel.

    Whisk in the chia seeds, sweetener, and vanilla.

    Let sit 10 minutes, then whisk again thoroughly to prevent clumping.

    Cover and refrigerate at least 4 hours or overnight until thickened.
