Ingredients
- 1/2 cup certified gluten-free rolled oats
- 1/2 cup unsweetened almond milk
- 1/4 cup unsweetened coconut yogurt
- 1/2 cup fresh or frozen blueberries
- 1 tsp maple syrup or allulose
- zest of 1/2 lemon
- 1 tsp fresh lemon juice

Combine oats, almond milk, coconut yogurt, blueberries, sweetener, and lemon zest in a jar, stirring well.

Cover and refrigerate at least 4 hours or overnight — the blueberries will release some juice and lightly swirl through the oats as they sit.

Stir in the fresh lemon juice right before serving — adding it the night before dulls its bright flavor, so it's best added at the last moment.
