Ginger Lemon Tea Tonic

Simmering the ginger, not just steeping it, is what pulls out its full warmth.

Ingredients

  • 1 tbsp fresh ginger, thinly sliced
  • 2 cups water
  • 2 tbsp fresh lemon juice
  • 1 tsp maple syrup or sugar-free honey-style syrup

Method

  1. 1

Combine ginger and water in a small saucepan and bring to a gentle simmer.

  2. 2

Simmer for 8-10 minutes — simmering, rather than just pouring hot water over the ginger, releases far more of its gingerol compounds for a warmer, spicier tonic.

  3. 3

Remove from heat and let cool for 1-2 minutes before adding the lemon juice — adding citrus right off the boil can dull its bright flavor.

  4. 4

Stir in the sweetener, strain out the ginger slices, and serve warm.
