- 1 tbsp fresh ginger, thinly sliced
- 2 cups water
- 2 tbsp fresh lemon juice
- 1 tsp maple syrup or sugar-free honey-style syrup

Combine ginger and water in a small saucepan and bring to a gentle simmer.

Simmer for 8-10 minutes — simmering, rather than just pouring hot water over the ginger, releases far more of its gingerol compounds for a warmer, spicier tonic.

Remove from heat and let cool for 1-2 minutes before adding the lemon juice — adding citrus right off the boil can dull its bright flavor.
