Peanut Butter Fudge
Stirring the mixture constantly as it cools on the stovetop, rather than letting it sit undisturbed, is what keeps the fudge smooth and creamy instead of grainy.

Ingredients
- 1 cup natural peanut butter
- 1/2 cup dairy-free butter
- 3/4 cup allulose
- 1/4 cup unsweetened almond milk
- 1 tsp vanilla extract

Combine peanut butter, dairy-free butter, allulose, and almond milk in a saucepan over medium-low heat.

Stir constantly as it melts together and comes to a gentle simmer, continuing to stir for a full 3-4 minutes as it cooks — stirring continuously like this as it cooks and cools is what keeps the sugar crystals in the allulose small and evenly distributed, giving smooth, creamy fudge; letting the mixture sit undisturbed lets larger crystals form, turning the texture grainy.

Remove from heat, stir in vanilla and salt.

Pour into a parchment-lined 8x8 pan, smoothing the top.

Chill at least 2 hours until firm, then slice into squares (plus 2h chill).
