Strawberry Banana Popsicles

Layering the strawberry and banana purees in stages, freezing each layer for 45 minutes before adding the next, is what creates distinct visible stripes instead of the two flavors bleeding into a single muddy color.

Ingredients

  • 1.5 cups fresh strawberries
  • 1 ripe banana
  • 2 tbsp allulose, divided
  • 1/3 cup unsweetened almond milk, divided

Method

  1. 1

Blend strawberries with half the allulose and half the almond milk until smooth.

  2. 2

Pour the strawberry puree into popsicle molds, filling each about halfway, and freeze 45 minutes until set but not fully solid.

  3. 3

Blend the banana with the remaining allulose and almond milk until smooth.

  4. 4

Pour the banana puree over the partially frozen strawberry layer, filling the rest of the mold — freezing the first layer partially before adding the second like this is what creates distinct visible stripes; pouring both layers in together while both are liquid just blends them into a single muddy color.

  5. 5

Insert popsicle sticks and freeze at least 5 more hours until completely solid (plus 45 min + 5h freeze).
