Ingredients

  • 2 cups plain unsweetened dairy-free yogurt
  • 3 tbsp allulose
  • 1 tsp vanilla extract
  • 1/2 cup mixed fresh berries, sliced
  • 2 tbsp chopped pistachios

Method

    Whisk dairy-free yogurt, allulose, and vanilla together until smooth.

    Spread the mixture into a thin, even layer, about 1/4-inch thick, on a parchment-lined baking sheet — spreading it thin like this is what lets it freeze solid quickly and snap cleanly into shards later; a thick layer stays soft in the center and turns to mush before you can break it into pieces.

    Scatter sliced berries and chopped pistachios evenly over the surface, pressing gently so they stick.

    Freeze at least 3 hours until completely solid (plus 3h freeze).
