Coconut Lime Popsicles
Straining the mixture through a fine mesh sieve before pouring it into the molds is what removes any lime zest fibers or pulp that would otherwise freeze into a distracting gritty texture.

Ingredients
- 2 cans full-fat coconut milk
- 1/3 cup allulose
- 1/3 cup fresh lime juice
- zest of 2 limes

Whisk coconut milk, allulose, lime juice, and lime zest together until the allulose fully dissolves.

Strain the mixture through a fine mesh sieve into a pitcher or bowl, pressing gently to extract all the liquid — this straining step removes lime zest fibers and any pulp, which is what keeps the finished popsicles smooth on the tongue instead of leaving behind a distracting gritty texture once frozen.

Pour into popsicle molds, filling each about 3/4 full.

Freeze 1 hour until partially set, then insert popsicle sticks.
