Frozen Banana "Nice Cream"

Scraping down the sides of the food processor repeatedly during blending is what breaks the frozen banana pieces down into a genuinely smooth, creamy texture instead of leaving it chunky and unevenly blended.

Ingredients

  • 4 very ripe bananas, sliced and frozen solid
  • 2 tbsp unsweetened almond milk
  • 1 tsp vanilla extract

Method

  1. 1

Slice ripe bananas and freeze them in a single layer on a tray until completely solid, at least 3 hours.

  2. 2

Add the frozen banana slices to a food processor with the almond milk and vanilla.

  3. 3

Blend, stopping every 30 seconds to scrape down the sides with a spatula — the banana pieces clump against the sides as they break down, and scraping repeatedly is what lets the blades keep working evenly through the whole batch for a genuinely smooth, creamy texture; skip the scraping and you're left with unevenly blended chunks.

  4. 4

Continue blending until completely smooth and the texture resembles soft-serve ice cream, 2-3 minutes total.

  5. 5

Serve immediately as soft-serve, or freeze 1 hour for firmer, scoopable texture.
