Ingredients

  • 4 cups seedless watermelon, cubed
  • 1/4 cup allulose
  • 2 tbsp fresh lime juice
  • 2 tbsp fresh mint leaves, finely chopped

Method

    Blend watermelon, allulose, and lime juice until completely smooth.

    Stir in the chopped mint leaves.

    Pour into a shallow baking dish and freeze for 45 minutes, until ice crystals start forming around the edges.

    Scrape the mixture thoroughly with a fork, breaking up all the ice crystals, then return to the freezer — repeating this scraping every 30 minutes for the next 2-3 hours is what breaks large ice crystals into small, light, fluffy flakes instead of letting the mixture freeze solid into one hard block that's difficult to scoop.

    Once fully frozen and fluffy in texture, serve immediately or store in an airtight container in the freezer (plus 3h freeze with scraping).
