Frozen Chocolate-Covered Banana Bites
Adding a spoonful of coconut oil to the melted chocolate before dipping is what makes it set into a thin, crackly shell the instant it touches the frozen banana, instead of staying soft and never fully hardening.

Ingredients
- 3 ripe bananas, sliced into rounds
- 8 oz dairy-free dark chocolate (sugar-free), chopped
- 1 tbsp coconut oil
- 2 tbsp chopped peanuts or shredded coconut for topping (optional)

Slice bananas into rounds about 1/2-inch thick and freeze on a parchment-lined tray for at least 1 hour, until completely solid.

Melt the chocolate gently with the coconut oil in a double boiler or short microwave bursts, stirring until smooth — adding the coconut oil into the melted chocolate like this is what makes it set into a thin, crackly shell the instant it touches the frozen banana; chocolate melted without any added fat stays soft and never fully hardens against the cold surface.

Working quickly, dip each frozen banana round into the melted chocolate, letting the excess drip off.

Sprinkle with chopped peanuts or shredded coconut immediately, before the shell sets, if using.

Return to the tray and freeze at least 15 minutes until the chocolate shell is fully hardened (plus 1h15min freeze). Store in the freezer.
