Skillet Pork Chops with Apples & Onions
Letting the pork chops rest at room temperature for 15 minutes before cooking helps them cook more evenly instead of staying cold in the center.

Ingredients
- 4 bone-in pork chops
- 2 tbsp olive oil
- 2 apples, sliced
- 1 onion, sliced
- 1 tbsp apple cider vinegar
- 1 tsp dried thyme
- salt and pepper to taste

Let the pork chops sit at room temperature for 15 minutes before cooking — starting them cold from the fridge means the outside overcooks before the center catches up.

Season generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat and sear the chops 4-5 minutes per side until golden and cooked through, then remove and rest.

In the same skillet, add the apples and onion, cooking 6-7 minutes until softened and lightly caramelized.

Stir in apple cider vinegar and thyme, scraping up any browned bits from the bottom of the pan.

Return the pork chops to the skillet, spoon the apples and onions over the top, and serve.
