Ingredients
- 1.5 lbs sushi-grade ahi tuna steaks
- 3 tbsp sesame seeds (black and white mixed)
- 2 tbsp tamari
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp avocado oil
- sliced green onion for garnish
Method
- 1
Pat the tuna steaks dry and press sesame seeds firmly onto all sides.
- 2
Whisk tamari, rice vinegar, and sesame oil for a dipping sauce.
- 3
Heat avocado oil in a heavy skillet over very high heat until smoking.
- 4
Sear the tuna just 60-90 seconds per side — this short, hot sear is what keeps the center raw and cool; any longer and the tuna cooks through like a regular steak instead of staying rare in the middle.
- 5
Slice thinly against the grain and serve with the dipping sauce, garnished with green onion.
