Ingredients

  • 1.5 lbs sushi-grade ahi tuna steaks
  • 3 tbsp sesame seeds (black and white mixed)
  • 2 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp avocado oil
  • sliced green onion for garnish

    Heat avocado oil in a heavy skillet over very high heat until smoking.

    Sear the tuna just 60-90 seconds per side — this short, hot sear is what keeps the center raw and cool; any longer and the tuna cooks through like a regular steak instead of staying rare in the middle.
