Ingredients

  • 4 gluten-free Italian sausages
  • 2 sweet potatoes, cubed
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano

Method

    Preheat oven to 425°F. Toss the cubed sweet potatoes with 1 tablespoon olive oil, salt, and pepper, and roast alone for 5 minutes — sweet potatoes take longer to cook through than the other ingredients, so this head start keeps everything finishing at the same time.

    Toss peppers and onion with remaining olive oil, smoked paprika, and oregano.

    Add the peppers, onion, and sausages to the pan with the sweet potatoes.
