Ingredients
- 4 gluten-free Italian sausages
- 2 sweet potatoes, cubed
- 2 bell peppers, sliced
- 1 onion, sliced
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano

Preheat oven to 425°F. Toss the cubed sweet potatoes with 1 tablespoon olive oil, salt, and pepper, and roast alone for 5 minutes — sweet potatoes take longer to cook through than the other ingredients, so this head start keeps everything finishing at the same time.
