Ingredients
- 1.5 lbs calamari rings and tentacles
- 1 cup rice flour
- 1/2 cup cornstarch
- 1 tsp paprika
- 2 cups avocado oil for frying
- salt to taste

Pat the calamari completely dry.

Mix rice flour, cornstarch, paprika, and salt in a shallow dish.

Heat avocado oil in a deep pot to 375°F.

Dredge the calamari in the flour mixture and fry in small batches for no more than 90 seconds — calamari cooks almost instantly, and every extra minute in the hot oil makes it tougher and more rubbery, not more thoroughly cooked.
