Ingredients

  • 1.5 lbs calamari rings and tentacles
  • 1 cup rice flour
  • 1/2 cup cornstarch
  • 1 tsp paprika
  • 2 cups avocado oil for frying
  • salt to taste
  • lemon wedges

Method

    Pat the calamari completely dry.

    Mix rice flour, cornstarch, paprika, and salt in a shallow dish.

    Heat avocado oil in a deep pot to 375°F.

    Dredge the calamari in the flour mixture and fry in small batches for no more than 90 seconds — calamari cooks almost instantly, and every extra minute in the hot oil makes it tougher and more rubbery, not more thoroughly cooked.

    Drain on paper towels, season with salt immediately, and serve with lemon wedges.
