Ingredients

  • 1 cup raw cashews, soaked in hot water 1 hour and drained
  • 3/4 cup unsweetened almond milk
  • 3 cloves garlic
  • 2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 4 medium zucchini, spiralized
  • 1 tbsp olive oil
  • salt and pepper to taste

Method

    Blend soaked cashews, almond milk, garlic, nutritional yeast, lemon juice, salt, and pepper until completely smooth.

    Heat olive oil in a large skillet over medium heat. Add zucchini noodles and cook 2-3 minutes until just tender.

    Pour the cashew sauce over the noodles, tossing gently to coat.

    Warm through 2 minutes, being careful not to boil, then serve immediately.
