Ingredients
- 1 cup raw cashews, soaked in hot water 1 hour and drained
- 3/4 cup unsweetened almond milk
- 3 cloves garlic
- 2 tbsp nutritional yeast
- 1 tbsp lemon juice
- 4 medium zucchini, spiralized
- 1 tbsp olive oil
- salt and pepper to taste

Blend soaked cashews, almond milk, garlic, nutritional yeast, lemon juice, salt, and pepper until completely smooth.

Heat olive oil in a large skillet over medium heat. Add zucchini noodles and cook 2-3 minutes until just tender.
