- 4 large bell peppers, tops cut off and seeded
- 1 cup cooked quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 cup salsa
- fresh cilantro, for garnish

Preheat oven to 375°F.

Mix cooked quinoa, black beans, corn, cumin, chili powder, and salsa in a large bowl.

Stuff each bell pepper generously with the quinoa mixture.

Place stuffed peppers upright in a baking dish with a splash of water at the bottom.

Cover with foil and bake 30-35 minutes until peppers are tender. Garnish with cilantro before serving.
