Cauliflower Fried "Rice"

Ingredients
- 1 medium head cauliflower, riced (or 4 cups pre-riced cauliflower)
- 2 tbsp avocado oil
- 2 eggs, beaten
- 1 cup diced carrots and peas (mixed)
- 3 green onions, sliced
- 3 tbsp tamari
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
Method

Heat 1 tbsp avocado oil in a large skillet or wok over medium-high heat. Pour in beaten eggs and scramble until just set, then remove and set aside.

Add remaining oil to the skillet, sauté carrots and peas 3-4 minutes until tender.

Add garlic and ginger, cooking 30 seconds until fragrant.

Add riced cauliflower and tamari, stir-frying 4-5 minutes until cauliflower is tender but not mushy.

Return scrambled eggs to the skillet, toss with green onions, and serve hot.
