Skillet Shrimp Fajitas

Ingredients
- 1.5 lbs large shrimp, peeled and deveined
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 tbsp avocado oil
- 1 tbsp chili powder
- 1 tsp cumin
- 2 tbsp lime juice
- corn tortillas for serving
Method

Toss shrimp with half the chili powder and cumin.

Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook peppers and onion 6-7 minutes until softened and lightly charred, then push to the side of the pan.

Add remaining oil to the empty side and add the shrimp — they cook fast, in just 2-3 minutes total, so they're added last to avoid turning rubbery from overcooking.

Toss everything together, add lime juice, and cook 1 more minute until shrimp are pink and cooked through.

Serve with warm corn tortillas.
