Jackfruit "Pulled Pork" Tacos
Shredding the young jackfruit with two forks before it hits the pan, not after, is what lets every strand soak up the sauce instead of just the outer layer.

Ingredients
- 2 cans young green jackfruit in water or brine, drained
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup sugar-free BBQ sauce
- 1 tsp smoked paprika
- corn tortillas
- shredded cabbage for serving

Drain and rinse the jackfruit, then shred it with two forks into pulled-pork-like strands before cooking — shredding it first, rather than after simmering, is what lets every strand soak up the sauce evenly instead of just the outer pieces absorbing flavor.

Heat olive oil in a skillet over medium heat, sauté onion and garlic 4-5 minutes until softened.

Add the shredded jackfruit and smoked paprika, cooking 5 minutes.

Stir in BBQ sauce, and simmer 10-12 minutes until the jackfruit has absorbed the sauce and turned tender.
