Ingredients

  • 2 cans young green jackfruit in water or brine, drained
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup sugar-free BBQ sauce
  • 1 tsp smoked paprika
  • corn tortillas
  • shredded cabbage for serving

    Drain and rinse the jackfruit, then shred it with two forks into pulled-pork-like strands before cooking — shredding it first, rather than after simmering, is what lets every strand soak up the sauce evenly instead of just the outer pieces absorbing flavor.

    Heat olive oil in a skillet over medium heat, sauté onion and garlic 4-5 minutes until softened.

    Add the shredded jackfruit and smoked paprika, cooking 5 minutes.

    Stir in BBQ sauce, and simmer 10-12 minutes until the jackfruit has absorbed the sauce and turned tender.
