Sheet-Pan Fish & Asparagus with Lemon
Roasting the asparagus on its own for a few minutes first keeps it from overcooking by the time the delicate fish is done.

Ingredients
- 4 white fish fillets (cod or halibut)
- 1 bunch asparagus, trimmed
- 3 tbsp olive oil
- 1 lemon, sliced
- 3 cloves garlic, minced
- salt and pepper to taste

Preheat oven to 400°F. Toss asparagus with half the olive oil, salt, and pepper, and roast alone for 5 minutes — this head start protects it from turning mushy since fish cooks faster than asparagus does.

Push the asparagus to one side of the pan, add the fish fillets to the other side.

Drizzle fish with remaining olive oil, top with garlic and lemon slices.

Roast 10-12 minutes until the fish flakes easily with a fork.
