One-Pan Ground Beef & Zucchini Skillet

Salting the zucchini and letting it sit for 10 minutes draws out the moisture that would otherwise make the whole skillet watery.

Ingredients

  • 1.5 lbs ground beef
  • 3 medium zucchini, diced
  • 1/2 tsp salt (for zucchini)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp Italian seasoning

Method

  1. 1

Toss the diced zucchini with salt and let it sit in a colander for 10 minutes, then pat dry — zucchini holds a lot of water, and skipping this step is the main reason skillet dishes with zucchini turn watery instead of staying hearty.

  2. 2

Brown the ground beef in a large skillet over medium-high heat, breaking it apart, about 6-7 minutes.

  3. 3

Add onion and garlic, cooking 3-4 minutes until softened.

  4. 4

Add the drained, patted-dry zucchini, diced tomatoes, and Italian seasoning.

  5. 5

Simmer 8-10 minutes until the zucchini is tender and the flavors have melded.
