One-Pan Cajun Shrimp & Sausage

Ingredients
- 1 lb large shrimp, peeled and deveined
- 12 oz gluten-free andouille-style sausage, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
Method

Heat olive oil in a large skillet over medium-high heat. Cook the sliced sausage 4-5 minutes until browned, then remove, leaving the rendered fat behind in the pan.

Add the bell pepper and onion to the same skillet, cooking in the sausage fat 5-6 minutes until softened — this is what carries the sausage's smoky flavor into the vegetables.

Toss the shrimp with Cajun seasoning, then add to the skillet along with the browned sausage.
