Ingredients

  • 1.5 lbs ground turkey
  • 1/4 cup almond flour
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 cups marinara sauce (check label for GF, no added sugar)
  • 3 cups fresh spinach

Method

  1. 1

Mix ground turkey, almond flour, egg, garlic, and oregano until just combined, then form into 16 small meatballs.

  2. 2

Warm the marinara sauce in a large skillet over medium heat until simmering.

  3. 3

Gently drop the raw meatballs into the simmering sauce — cooking them this way, submerged in liquid instead of dry-baked, is what keeps lean ground turkey from drying out.

  4. 4

Cover and simmer 15-18 minutes, turning occasionally, until the meatballs are cooked through.

  5. 5

Stir in the spinach in the last 2 minutes, just until wilted, before serving.
