Ingredients

  • 1 tbsp coconut oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 4 cups chicken broth
  • 1 can (14 oz) full-fat coconut milk
  • 2 cups shredded cooked chicken
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1/2 cup chopped cilantro

Method

    Melt coconut oil in a large pot over medium heat. Sauté onion 4-5 minutes until soft.

    Add garlic and ginger, cooking 1 minute until fragrant.

    Pour in chicken broth and coconut milk, bring to a gentle simmer.
