Ingredients
- 1 tbsp coconut oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 4 cups chicken broth
- 1 can (14 oz) full-fat coconut milk
- 2 cups shredded cooked chicken
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1/2 cup chopped cilantro

Melt coconut oil in a large pot over medium heat. Sauté onion 4-5 minutes until soft.
