Ingredients
- 1.5 lbs chicken breast, cubed
- 2 tbsp cornstarch
- 2 tbsp avocado oil
- 1/2 cup raw cashews
- 3 tbsp tamari (gluten-free soy sauce alternative)
- 1 tbsp rice vinegar
- 1 tbsp allulose (or sugar-free sweetener of choice)
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- 2 green onions, sliced
Method

Toss chicken cubes with cornstarch until lightly coated.

Heat avocado oil in a large skillet over medium-high heat. Cook chicken 6-7 minutes until golden and cooked through. Remove and set aside.

In the same skillet, toast cashews 2 minutes until golden, then add garlic and ginger, cooking 30 seconds until fragrant.

Whisk tamari, rice vinegar, and allulose together, pour into the skillet, and simmer 1-2 minutes until slightly thickened.

Return chicken to the skillet, toss to coat, and garnish with green onions before serving.
