Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 3 cans (15 oz each) black beans, drained
  • 4 cups vegetable broth
  • 1 tbsp lime juice
  • fresh cilantro for garnish

Method

    Heat olive oil in a large pot over medium heat. Sauté onion 4-5 minutes until softened.

    Add garlic, chili powder, and cumin, cooking 1 minute until fragrant — blooming the spices in the oil like this releases far more flavor than adding them straight to the broth.

    Add black beans and vegetable broth, bring to a simmer.

    Simmer 15-20 minutes, then use an immersion blender to puree about a third of the soup for a thicker body, leaving the rest chunky.

    Stir in lime juice and garnish with cilantro before serving.
