Beef Bone Broth Pho-Inspired Soup
Skimming the foam off the broth in the first 15 minutes of simmering is what keeps it clear instead of cloudy and murky.

Ingredients
- 2 lbs beef bones
- 1 onion, halved
- 1 piece fresh ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 8 cups water
- 1 tbsp fish sauce
- 8 oz rice noodles
- thinly sliced raw beef
- fresh basil, bean sprouts, lime wedges for serving

Char the onion and ginger under the broiler 5-6 minutes until slightly blackened.

Combine beef bones, charred onion and ginger, star anise, cinnamon stick, and water in a large pot, bring to a boil.

Reduce heat to a low simmer and skim off the foam that rises to the top for the first 15 minutes — this is what keeps the broth clear instead of cloudy and murky. Simmer 2-3 hours total.

Strain the broth, discarding the solids, and stir in fish sauce.

Cook rice noodles according to package directions, divide among bowls, top with thinly sliced raw beef, and ladle the very hot broth over top so it cooks the beef instantly. Serve with basil, bean sprouts, and lime.
