Ingredients
- 1.5 lbs ground turkey
- 1 tbsp olive oil
- 1 onion, diced
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 can (14.5 oz) diced tomatoes
- 2 cans (15 oz each) kidney beans, drained
- 2 cups chicken broth
- salt and pepper to taste
Method
- 1
Heat olive oil in a large pot over medium-high heat. Add ground turkey and let it brown undisturbed 3-4 minutes before breaking it apart — this builds a deeper base flavor than stirring it right away.
- 2
Add onion, cooking 4-5 minutes until softened.
- 3
Stir in chili powder and cumin, cooking 1 minute until fragrant.
- 4
Add diced tomatoes, kidney beans, and chicken broth, bring to a simmer.
- 5
Simmer uncovered 25-30 minutes, stirring occasionally, until thickened to your liking.
