One-Pan Shrimp & Zucchini Noodles

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 medium zucchini, spiralized
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • salt to taste

Method

    Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add shrimp and cook 2-3 minutes per side until pink. Remove and set aside.

    Add remaining olive oil, garlic, and red pepper flakes to the skillet, cooking 30 seconds until fragrant.

    Add zucchini noodles and toss 2-3 minutes until just tender, being careful not to overcook.

    Return shrimp to the skillet, add lemon juice and parsley, toss to combine, and serve immediately.
