French Onion Soup (Dairy-Free, GF)
Caramelizing the onions low and slow for a full 45 minutes, not rushing it on high heat, is what builds the soup's signature deep sweetness.

Ingredients
- 4 large onions, thinly sliced
- 3 tbsp olive oil
- 6 cups beef broth
- 1 tbsp tamari
- 1 tsp dried thyme
- 4 slices gluten-free bread, toasted
- dairy-free mozzarella-style shreds (melting variety)
- salt and pepper to taste
