Ingredients

  • 1.5 lbs chicken breast
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 cups cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 avocado, sliced
  • 2 cups shredded lettuce
  • 1/4 cup fresh lime juice

Method

    Season chicken with olive oil, chili powder, and cumin.

    Heat a skillet over medium-high heat and cook chicken 6-7 minutes per side until cooked through. Rest 5 minutes, then slice.
