Ingredients
- 2 salmon fillets (6 oz each)
- 1 tbsp olive oil, plus extra for dressing
- 4 cups mixed greens
- 1/2 cucumber, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup kalamata olives
- 1/4 red onion, thinly sliced
- 2 tbsp red wine vinegar
- 1 tsp dried oregano

Preheat oven to 400°F. Brush salmon with olive oil and season with salt and pepper.

Bake salmon 12-14 minutes until it flakes easily with a fork.
