Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil, plus extra for dressing
  • 4 cups mixed greens
  • 1/2 cucumber, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup kalamata olives
  • 1/4 red onion, thinly sliced
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano

Method

    Preheat oven to 400°F. Brush salmon with olive oil and season with salt and pepper.

    Bake salmon 12-14 minutes until it flakes easily with a fork.

    While salmon cooks, toss mixed greens, cucumber, tomatoes, olives, and red onion in a large bowl.

    Whisk together red wine vinegar, a drizzle of olive oil, and oregano for the dressing.

    Top the salad with the baked salmon and drizzle with dressing before serving.
