Ingredients
- 1.5 lbs chicken breast, sliced
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 tbsp avocado oil
- 1 tbsp chili powder
- 1 tsp cumin
- 2 cups cooked rice
- 1 lime, juiced

Toss chicken with chili powder and cumin.

Heat 1 tbsp avocado oil in a large skillet over high heat until just smoking. Add chicken in a single layer without crowding, searing 4-5 minutes undisturbed — this hard sear in a hot, mostly-dry pan is what gives real char, not steamed gray chicken.

Remove chicken, add remaining oil, peppers, and onion, cooking 5-6 minutes until charred at the edges.

Return chicken to the pan, squeeze lime juice over everything, and toss to combine.
