Ingredients

  • 6 cups chopped romaine
  • 2 cups shredded cooked chicken
  • 4 slices bacon, cooked and crumbled
  • 2 eggs, hard-boiled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 avocado (half diced for salad, half for dressing)
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 2 tbsp water

Method

  1. 1

Hard-boil the eggs: cover with cold water, bring to a boil, then remove from heat and let sit covered 10-11 minutes before transferring to an ice bath.

  2. 2

Blend half the avocado with lime juice, olive oil, and water until smooth and pourable for the dressing.

  3. 3

Spread the chopped romaine as the base on a large platter.

  4. 4

Arrange chicken, bacon, sliced eggs, tomatoes, and diced avocado in distinct rows across the top — this classic arrangement, rather than tossing everything together, is what makes it a Cobb salad and keeps every bite balanced.

  5. 5

Drizzle with avocado dressing before serving.
