Ingredients
- 1.5 lbs chicken tenders
- 1 cup almond flour
- 1/2 cup rice flour
- 1 tsp paprika
- 1 tsp garlic powder
- 2 eggs, beaten
- olive oil spray
- salt and pepper to taste

Preheat oven to 425°F and line a baking sheet with parchment paper, placing a wire rack on top if available.

Mix almond flour, rice flour, paprika, garlic powder, salt, and pepper in a shallow dish.

Dip each chicken tender in beaten egg, then coat thoroughly in the flour mixture.

Arrange tenders on the prepared rack and spray lightly with olive oil.
