Ingredients
- 8 bone-in chicken thighs
- 3 tbsp Dijon mustard
- 2 tbsp allulose (or sugar-free honey-style syrup)
- 1 tbsp apple cider vinegar
- 2 cloves garlic, minced
- 1 tbsp olive oil
- salt and pepper to taste

Preheat oven to 400°F. Season chicken thighs with salt and pepper.

Whisk mustard, allulose, apple cider vinegar, garlic, and olive oil together to make the glaze.

Heat an oven-safe skillet over medium-high heat and sear chicken skin-side down 4-5 minutes until golden.

Flip chicken, brush generously with the glaze, and transfer skillet to the oven.

Bake 20-22 minutes, brushing with more glaze halfway, until chicken reaches 165°F internally.
