Turkey Meatloaf (Dairy-Free, Gluten-Free)

Letting the meatloaf rest for 10 minutes after baking is what keeps it from crumbling apart when you slice it — cut it too soon and it falls apart.

Ingredients

  • 2 lbs ground turkey
  • 1/2 cup almond flour
  • 2 eggs
  • 1/4 cup unsweetened almond milk
  • 1 onion, diced small
  • 2 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1/4 cup sugar-free ketchup (for glaze)
  • 1 tbsp apple cider vinegar

Method

  1. 1

Preheat oven to 375°F. Mix ground turkey, almond flour, eggs, almond milk, onion, garlic, and Italian seasoning until just combined — overmixing makes the loaf dense, so stop as soon as it holds together.

  2. 2

Shape into a loaf on a parchment-lined baking sheet.

  3. 3

Whisk sugar-free ketchup and apple cider vinegar, brush half over the loaf.

  4. 4

Bake 50-55 minutes until the internal temperature reaches 165°F, brushing with remaining glaze halfway through.

  5. 5

Let the meatloaf rest 10 minutes before slicing — cutting it too soon lets it fall apart instead of holding its shape in clean slices.
