Apricot-Glazed Chicken Thighs

Straining the apricot preserves through a sieve before making the glaze removes the fruit chunks that would otherwise burn before the chicken finishes roasting.

Ingredients

  • 8 bone-in chicken thighs
  • 1/2 cup sugar-free apricot preserves
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 clove garlic, minced
  • salt and pepper to taste

Method

  1. 1

Preheat oven to 400°F. Season chicken thighs with salt and pepper.

  2. 2

Push the apricot preserves through a fine mesh sieve to remove fruit chunks — straining it smooth like this keeps small fruit pieces from scorching on the chicken skin before the meat finishes roasting.

  3. 3

Whisk the strained preserves with Dijon mustard, apple cider vinegar, and garlic.

  4. 4

Arrange chicken skin-side up on a sheet pan and brush generously with the glaze.

  5. 5

Roast 35-40 minutes, brushing with more glaze halfway through, until the chicken reaches 165°F and the skin is caramelized.
