Peanut Butter Chocolate Chip Bars

Folding the chocolate chips in only after the warm mixture has cooled slightly is what keeps them from melting into streaks instead of staying as distinct chips.

Ingredients

  • 1.5 cups almond flour
  • 1/2 cup natural peanut butter
  • 1/4 cup allulose or sugar-free maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 cup dairy-free chocolate chips (sugar-free)

Method

  1. 1

Mix almond flour, peanut butter, allulose, melted coconut oil, and vanilla together until a thick dough forms.

  2. 2

Let the mixture cool at room temperature for 5-10 minutes if the coconut oil was warm — folding the chocolate chips into a still-warm mixture melts them into streaks instead of leaving distinct chips throughout the bars.

  3. 3

Fold in the chocolate chips once the mixture has cooled slightly.

  4. 4

    Press firmly into a parchment-lined 8x8 pan.

  5. 5

Chill at least 1 hour until firm, then slice into bars.
