Frozen Yogurt Bark (Coconut Yogurt)

Spreading the yogurt in a thin, even layer before freezing is what makes it snap into clean shards instead of thick, chewy chunks that are hard to bite through.

Ingredients

  • 3 cups unsweetened coconut yogurt
  • 2 tbsp allulose or sugar-free maple syrup
  • 1 tsp vanilla extract
  • 1 cup mixed berries
  • 2 tbsp unsweetened shredded coconut

Method

  1. 1

Whisk coconut yogurt, allulose, and vanilla together until smooth.

  2. 2

Line a baking sheet with parchment paper and spread the yogurt mixture into a thin, even layer, about 1/4-inch thick — spreading it this thin is what lets it freeze into crisp, snappable shards instead of thick, chewy chunks that are hard to bite through straight from the freezer.

  3. 3

Scatter berries and shredded coconut evenly over the top, pressing gently so they adhere.

  4. 4

Freeze at least 3 hours until completely solid.

  5. 5

Break into pieces and store in the freezer in an airtight container.
