Perfect Guacamole
Pressing plastic wrap directly onto the surface of the guacamole, with no air gaps, is what actually stops it from browning — lime juice alone only slows oxidation, it doesn't stop it.

Ingredients
- 4 ripe avocados
- 1/4 cup diced red onion
- 1 jalapeño, diced (seeds removed for less heat)
- 1/4 cup cilantro, chopped
- 2 tbsp fresh lime juice
- salt to taste
Method
- 1
Halve and pit the avocados, scoop the flesh into a bowl, and mash to your preferred consistency, leaving some chunks for texture.
- 2
Fold in red onion, jalapeño, cilantro, lime juice, and salt.
- 3
Taste and adjust salt and lime juice as needed.
- 4
If not serving immediately, press a piece of plastic wrap directly onto the surface of the guacamole, smoothing out any air pockets, before covering the bowl — direct contact like this, with zero air touching the surface, is what actually stops browning; lime juice alone only slows oxidation down, it doesn't prevent it entirely.
- 5
Refrigerate until ready to serve.
