Crispy Baked Buffalo Cauliflower Bites

Tossing the baked cauliflower in sauce only after it comes out of the oven, not before, is what keeps the coating crisp instead of steaming soft under a wet sauce.

Ingredients

  • 1 large head cauliflower, cut into florets
  • 1/2 cup rice flour
  • 1/2 cup water
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 cup hot sauce (check label GF)
  • 2 tbsp dairy-free butter, melted

Method

  1. 1

Preheat oven to 450°F and line a baking sheet with parchment paper.

  2. 2

Whisk rice flour, water, garlic powder, and smoked paprika into a smooth, thin batter.

  3. 3

Toss the cauliflower florets in the batter, coating evenly, then arrange in a single layer on the sheet.

  4. 4

Bake 25-30 minutes, flipping halfway, until crisp and golden.

  5. 5

Whisk hot sauce and melted dairy-free butter together, and toss the just-baked, still-hot cauliflower in the sauce right before serving — tossing it in sauce only at the very end, once it's already crisp, is what keeps the coating crunchy instead of steaming soft and soggy under a wet sauce.
